About this deal

KI NO BI has a recognisable dry gin flavour with a Japanese accent: pure, perfectly balanced with distinctive aromas and a lingering finish of light ginger.

In what may be a world first, KI NO BI Kyoto Dry Gin has been aged in oak barriques sourced from the Champagne region’s Argonne Forest and previously used to mature Henri Giraud’s finest Champagnes. The botanicals are grouped into six flavour camps, which are individually distilled before being expertly blended. Guided by kaizen (continuous improvement) The Kyoto Distillery uses botanicals such as yellow yuzu, hinoki wood chips, bamboo, gyokuro tea and green sanshō (peppercorn) berries, and water collected weekly from a well, to make its dry gin flavour. A prominent citrus aroma of tangy yuzu – a bit like a lemon-lime-grapefruit hybrid – comes to the fore, with a background of smashed basil and white pepper. Finally, the gin is blended with the exceptional water of Fushimi, long famous for its fine sake brewing.

This is the second release from the Kyoto Distillery, Ki No Tea, has been meticulously created to the same exacting standards. A Japanese gin produced at the Kyoto distllery, Ki No Bi is created with Japanese botanicals such as yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips (Japanese cypress), bamboo, gyokuro tea from the Uji region and green sansho (Japanese peppercorn) berries. A fresh aroma of yuzu, and a thread of sansho pepper that lingers like a morning mist in a bamboo forest. Multi-award-winning, using top quality rice spirit, natural Japanese botanicals and blended with pure Fushimi water, non-chill-filtered.

The name translates as "The Beauty of the Seasons", it is inspired by tradition and artisanally crafted in Kyoto. If the vintage of a wine is important to you then please leave a note at checkout advising us of this. The Kyoto Distillery is proud to partner with Champagne Henri Giraud in this ground-breaking collaboration, which came about after the visit of 12th-generation owner Claude Giraud to The Kyoto Distillery. KI NO BI (‘The Beauty of the Seasons’) is inspired by tradition and is distilled, blended and bottled in Kyoto.
